Default SCSI and IDE HD drives

I don't have too much experience on computers, but i've come across a set of 4 scsi hard drives (18GB) 7,200-10,000rpm and i have never worked with SCSI drives before. They were fairly cheap and i need this size of drives for computer repairs and was attracted by the RPM as well. I've learned so far that these are used on servers and you'd need a Host card or Scsi controller card to hook these up and there's a variety of interfaces: ultra 160,wide ultra 2,3. Now my questions, are the controller cards different for each interface? or can i find a card that can work with 2 different type of interfaces. Is it near as easy to install and configure these scsi's as IDE's? Thanks
